Trial+Error is a cocktail lounge and bourbon destination rooted in curiosity, craft, and community. Our back story – founded by two friends whose basement bourbon podcast turned into a full-blown spirits company. It all began with a mic, a couple of Glencairns, and an insatiable desire to learn more about whiskey. That spark became Pursuit Spirits, a bold, independent bourbon brand that celebrates transparency, exploration, and taste above hype.
This history has now transcended into this, our basement lounge, Trial+Error. What started as a passion project is now a one-of-a-kind bar experience, offering expertly crafted cocktails, curated wines and beers, and over 100+ expressions from Pursuit Spirits ranging from private barrel releases to distillery-exclusives you won’t find anywhere else.
